Mexican Chicken and Rice This is a fantastic one-pot recipe! Ingredients: 1 1/2 cans chicken broth 1 teaspoon ground cumin 1/4
teaspoon black pepper 1 1/2 cups chopped
onion 1 1/2 cups chopped green bell
pepper 3/4 cup uncooked, non-instant
long grain rice 1 can kidney beans,
drained and rinsed 1 can (10 ounces)
chicken, drained and broken up with a fork 1
small can (2 1/4 oz) sliced black olives
In a saucepan combine the broth, cumin, pepper, onion and bell pepper. Heat this to boiling Stir in the rice Cover
and simmer on low until rice is at desired doneness Add the beans and chicken. Heat completely. Stir in the black olives and serve.
I love this topped
with sour cream!
